Ingredients
- 1 whole beef tenderloin
- 2 tbsp. butter
- 1/2 c. minced green onion
- 2 tbsp. buttertbsp. soy sauce
- 1 teaspoon dijon style mustard
- Dash of fresh grnd pepper
- 3/4 c. dry sherry
Directions
- Spread tenderloin with the first 2 Tbsp. butter. Place on rack in shallow baking pan. Bake, uncovered, for 30 min in 300 degree oven. Meanwhile, in small saucepan, cook green onions in remaining 2 Tbsp. butter till tender. Add in soy sauce, mustard, and pepper. Stir in sherry; heat to just boiling. Pour over tenderloin and bake an additional 30 to 35 min for rare tenderloin. Baste frequently with sauce.
