Summertime Pasta Salad With Fresh Tuna Recipe

  •     Salt as needed
  • 8 ounce Penne
  • 1 lb Fresh tuna steak - (abt 3/4" thick)
  • 1/4 c. Extra virgin olive oil
  • 1 pkt Frzn corn - (10 ounce) thawed, patted dry
  • 1 jar Roasted red peppers - (6 to 7 ounce) minced
  •     (or possibly minced fried sweet peppers with onions)
  • 1/4 tsp Dry red pepper flakes - (to 1/2 tspn)
  • 1/4 c. Mayonnaise (optional)
  • 2 Tbsp. Snipped chives

Directions

  1. Bring a large pot of salted water to a boil. Add in the pasta and cook till tender, about 10 min. When the pasta is done, drain it, cold under cool water, drain again and pat dry.
  2. Meanwhile, grill or possibly broil the tuna 2 to 3 min a side only or possibly till charred on the outside, but rare on the inside. (If you do not like tuna rare, substitute canned tuna that you do not cook.) When the tuna is done remove it to a plate for later.
  3. In a large mixing bowl combine the extra virgin olive oil, corn, peppers, red pepper flakes and optional mayonnaise. Toss the pasta with the extra virgin olive oil, corn and peppers.
  4. Portion out the pasta. Cut the tuna into thin diagonal strips and pile them in the center of the pasta; garnish with chives.
  5. This recipe yields 4 servings.
