Directions

  1. Process onion and garlic in food processor till minced, stopping to scrape down sides; remove mix, and set aside.
  2. Process 1 package corn in food pro-cessor till almost smooth (about 45 seconds), stopping to scrape down sides.
  3. Cook bacon in a large skillet till crisp; drain, reserving 2 Tbsp. drippings in skillet. Crumble bacon. Add in onion mix to drippings, and saute/fry over medium-high heat till tender. Add in pureed corn, remaining package of corn, Cajun seasoning, and lowfat milk. Cook over medium heat 20 min. Stir in bacon.
  4. This recipe yields 6 servings.
