  • 1/2 bowl lettuce, shredded
  • 1/2 c. finely minced white onion
  • 1/2 c. finely minced celery
  • 1/2 c. finely minced green pepper
  • 1 sm. can English peas, liquid removed
  • 1/2 c. minced red onion
  • Mayonnaise
  • 1 teaspoon sugar
  • 8 ounce. grated cheese
  • 8 slices crisp bacon
  • 1 c. lowfat sour cream

Directions

  1. In a medium bowl with a tight-fitting lid, shred lettuce. Mix together onion, celery, and pepper. Place these vegetables in a layer on top of lettuce. Add in English peas as next layer. Beat sufficient mayonnaise to make a layer 1/4 inch deep over the peas. Stir in lowfat sour cream. Sprinkle the sugar over mayonnaise layer; add in grated cheese layer and sprinkle bacon crumbs on top. Cover tightly and chill 24 hrs. Number of servings: 10-12.
