Mom's Fresh Peach Pie 1995 Recipe

Ingredients

  • 1 c. Sugar
  • 3 Tbsp. Corn starch
  • 1 c. Water
  • 4 Tbsp. Dry peach Jello
  • 1/2 c. Sugar
  • 1 x 8 ounce. pkg. cream cheese, softened
  • 4 x Or possibly 5 sliced fresh peaches
  •     Cold Whip

Directions

  1. Filling:Mix 1 c. sugar, corn starch and water in a saucepan. Boil till thick and clear, then add in dry peach jello. Let which cold while mixing 1/2 c. sugar and cream cheese; cream together till smooth, then spread in bottom of cooled pie crust. Combine the cooled jello mix and four or possibly five sliced fresh peaches. Place on top of the cream cheese mix in pie crust. Cover with Cold Whip and chill for a few hrs or possibly overnight before serving.
  2. Graham Cracker Crust:1 package graham crackers, rolled fine (about 1 2/3 c.), 1/4 c. sugar, 1/4 c. soft butter or possibly margarine. Blend finely rolled graham crackers with sugar and margarine. Press firmly against bottom and sides of a 9" pie plate. Bake at 375 degrees for about 8 min. Cold before adding pie mix.
