  • 1 1/2 pound kielbasa (or possibly pork sausage)
  • 1 (27 ounce.) can sauerkraut, rinsed, liquid removed
  • 1 tbsp. sliced green onion, with tops
  • Packaged instant mashed potatoes (sufficient for 4 servings)
  • 4 tbsp. grated Parmesan cheese

Directions

  1. Stir together sauerkraut and green onion, turn into 1 1/2 qt casserole. Spread sliced kielbasa over sauerkraut mix (pork sausage should be browned in skillet and fat liquid removed off). Prepare mashed potatoes according to package directions. Stir 2 Tbsp. of the cheese into the potato. Spread potato over sausage, sprinkle with remaining cheese. Bake, uncovered, at 400 degrees till heated through, 35-40 min. Makes 6 servings.
