Ingredients

  • 1 Tbsp. Crushed red New Mexican chile, seeds included
  • 1 1/2 lb Fresh lamb's quarters or possibly spinach
  • 3 Tbsp. Minced onion
  • 2 Tbsp. Bacon fat or possibly vegetable shortening
  • 1/2 c. Cooked pinto beans
  • 1 tsp Vinegar

Directions

  1. Cook the spinach, drain, and chop. Saute/fry the onion in the oil till soft.
  2. Add in the other ingredients and continue to saute/fry for 5 - 10 min.
  3. Serves: 4 to 6
