Ingredients
- 1/2 x Canola oil
- 1/2 c. Applesauce
- 3 x Carrots, finely grated
- 1Â 1/4 c. Brown sugar
- 1/4 c. Honey
- 1 tsp Vanilla
- 4 x Large eggs, lightly beaten
- 2 tsp Baking soda
- 2 c. All-purpose flour
- 2 tsp Cinnamon
- Â Â Powdered sugar
Directions
- Combine the first seven ingredients in a large mixing bowl and combine well. Add in the soda, flour and cinnamon and mix till well combined. Spray muffin tins with non-stick cooking spray and fill each muffin c. about 3/4's full. Bake at 350 for 20 min. Remove muffins from tins while still hot. When cold, sprinkle muffins with powdered sugar.
