  • 2 c. shelled peas or possibly 1 (10 ounce) pkg. frzn peas or possibly 1 (17 ounce) can peas
  • 1 c. cubed cheddar cheese
  • 2 hard cooked large eggs, minced
  • 1/4 c. minced celery
  • 2 T minced onion
  • 2 T minced pimiento
  • 1/3 c. mayonnaise or possibly salad dressing
  • 1/2 teaspoon salt
  • 1/4 teaspoon bottled warm pepper sauce
  • 1/8 teaspoon pepper
  • 6 med. tomatoes
  • Lettuce leaves

Directions

  1. Cook fresh peas. (Or possibly, cook frzn peas according to package directions.) Thoroughly drain the cooked or possibly canned peas. Cool cooked peas.In large bowl put together peas, cheese cubes, hard cooked large eggs, celery, onion, and pimiento. Put together mayonnaise or possibly salad dressing, salt, hot pepper sauce and pepper. Add in to pea mix; toss to put together. Cover and chill several hrs or possibly overnight. Stir mix well.
  2. Cut each tomato into 8 wedges, cutting to, but not through, bottom of tomato. On salad plates, place tomatoes atop lettuce leaves, fill with pea mix. Makes 6 servings.
