Ingredients

  • 4 x center cut pork chops (about 3/4 to 1 inch thick)
  • 1 x or possibly 2 tsp. table salt
  • 1/2 tsp black pepper
  • 1/2 tsp powdered garlic
  • 1/4 tsp paprika
  • 1/2 c. (more if needed) self rising flour
  • 1/2 c. peanut or possibly vegetable oil
  • 2 x Vidalia or possibly sweet onions, trimmed, peeled, sliced

Directions

  1. Additional water or possibly Half & Half, if you like Season pork chops with salt.
  2. pepper, garlic pwdr, paprika. Coat thoroughly with flour. Lay aside.
  3. Heat oil in heavy skillet till a couple of drops of water sizzles when placed in the pan. Coat chops again with flour and gently place in warm oil over medium-high heat. Brown on each side - about 3 min per side.
  4. Remove to rack to drain and set aside. Add in sliced onions to pan drippings and cook for 2 min. Add in remaining flour and continue stirring till onions and flour are golden. Don't overcook! Add in 2 c. water and bring to a boil. Stir till well mixed. Return chops to gravy and cover skillet. Reduce heat and simmer for about 25 min or possibly till gravy is thick and pork chops are very tender. Add in a bit of water, if needed or possibly if gravy gets too thick and you want to, add in a little Half and Half to the gravy.
