- 1 c. Cilantro leaves
- 2 Tbsp. Red wine vinegar
- 1 Tbsp. Fresh lime juice
- 1 Tbsp. Garlic, chopped
- 1 Tbsp. Red onion, finely minced
- 1 Tbsp. Honey
- 1/2 c. Extra virgin olive oil
- Â Â Salt and freshly grnd pepper, to taste
- 4 c. Mixed mesclun greens
- 2 x Tomatoes, quartered
Directions
- How to Prepare:1. Combine the cilantro leaves, vinegar, lime juice, garlic, onion, and honey in a blender and puree.
- 2. With the motor running, slowly add in the oil, drop by drop at first, till emulsified. Season with salt and pepper.
