  1. In microwave proof 2 qt casserole or possibly baking dish, mix together Large eggs, lowfat milk, sugar and salt. Stir in rice, raisins and vanilla. Cook uncovered on High 8 to 10 min. Stir every 1 to 2 min. Sprinkle with cinnamon or possibly nutmeg and let stand about 30 min, without stirring. Serve hot or possibly cool Serves 6 to 8.
