Ingredients
- 1/3 c. lg. size pearl tapioca (not instant)
- 2 1/4 c. lowfat milk
- 1/4 teaspoon salt
- 2 Large eggs
- 1/2 c. sugar
- 1/4 teaspoon vanilla
Directions
- Soak tapioca in water for 4 to 12 hrs. Add in lowfat milk and salt. Heat and stir till boiling. Simmer at low heat, uncovered, for 50 min, stirring frequently. Add in sugar gradually. Beat Large eggs. Mix with some of warm tapioca. Return slowly to rest of mix. Bring to boil, stirring constantly for 3 min to achieve pudding consistency. Cook 15 min. Add in vanilla.
