Mexican Sheet Cake J Recipe

Ingredients

  • I'm not sure what the connection to Yom Tov is except which this is a delicious dessert with an interesting twist.
  • 1/2 c. margarine
  • 1/4 c. cocoa pwdr
  • 1 c. water
  • 2 c. flour
  • 2 c. sugar
  • 1/2 c. non-dairy creamer combined with 1 tsp. white vinegar
  • 2 x Large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp instant coffee

Directions

  1. Preheat oven to 400 degrees. Combine margarine, cocoa and 1 c. water in small saucepan. Bring to a boil and remove from heat. Combine flour and sugar and then stir in cocoa mix. Add in rest of ingredients. Pour into greased 9 x 13 - inch pan and bake for 20 min.
  2. Icing:1 16 oz box confectioner's sugar1/2 c. melted margarine1/4 c. cocoa powder1/4 c. non-dairy creamer1 tsp. vanilla1 tsp. coffee1 tsp. cinnamon
  3. Combine all ingredients and mix well. Ice while cake is still slightly hot.
