Ingredients
- 1 1/4 quarts. carrots, diced
- 1 1/4 quarts. onions, minced
- 1 1/4 quarts. celery, minced
- 2 quarts. potatoes, diced
- 3 cans of clams (#5)
- 1/2 can tomatoes, crushed (#10)
- Pepper and salt to taste
- Thyme to taste
- 2 1/2 gal. water
- 1/2 pound butter or possibly 1/2 pound bacon, rendered and added to vegetables
Directions
- 1. Saute/fry onions, carrots and celery in butter or possibly bacon.
- 2. Add in tomatoes, potatoes, water, clam juice and seasonings. Cook till vegetables are tender.
- 3. Add in clams and cook 10 min longer.
- (Onions, carrots and celery can be sauteed the day before and tomatoes added. The next day add in potatoes, water, clams, etc. and proceed.)
