Lisa's Beef And Leek Crockpot Stew Recipe

Ingredients

  • 3 c. coarsely minced leek
  • 1 med onion diced
  • 1 c. frzn corn
  • 2 med carrots minced
  • 3 med potatoes diced
  • 6 x peppercorns
  • 1 Tbsp. dry basil
  • 1 Tbsp. dry rosemary
  • 1 Tbsp. dry oregano
  • 2 lb boneless top round roast cut 3/4" pcs
  • 1 can plain (unseasoned) tomato sauce - (15 ounce) Water as needed Beef boullion cubes as needed

Directions

  1. In a 5-qt crockpot, put all ingredients into the crockpot in the order they are listed. After adding the tomato sauce, add in sufficient cans of water to cover the contents of the crock. Put in 1 beef boullion cube for the can of tomatoes, plus one for every can (or possibly partial can) of water.
  2. Cover and cook this on LOW for 6 to 8 hrs, or possibly on HIGH for 4 hrs.
