Ingredients
- 1 med onion minced
- 1/2 med red bell pepper or possibly green, minced
- 2 x cloves garlic chopped
- 9 med mushroom thinly sliced
- 15 ounce canned tomatoes with juice
- 1/2 c. frzn corn kernels
- 15 ounce canned black beans rinsed and liquid removed
- 1/2 tsp cinnamon
- 1/2 tsp oregano up to 1 teaspoon
- 1 Tbsp. chili pwdr
- 1 tsp cumin up to 3 tsp healthy pinch cayenne
- 4 whl flour tortilla not the huge ones
Directions
- I call these lazy enchiladas because the sauce and filling are cooked in thesame pot and there is no baking time. With tomato on the inside, it has a nicecreamy texture which I missed when giving up cheese.The spices are approximatebecause I do not measure, but taste til it's right:)
- 1. Water saute/fry onion,pepper garlic, till onion translucent/soft.
- 2. Add in spices and let them coat the onion mix.
- 3. Add in mushrooms and let cook briefly for 1-2 min.
- 4. Add in can of stewed tomatoes and bring to simmer.
- 5. Reduce heat and simmer for 10 min.
- 6. Add in corn and simmer for 10 more min.
- 7. Add in beans and simmer for 5 min.
- 8. Hot tortillas so they are pliable, and with a slotted spoon scoop mix in tortilla, roll, and place on dinner plate. With Tbsp., take liquid and pour over tortillas. Repeat till done.
