Ingredients
- 1 lb Butter (no substitutes) softened
- 2 1/2 c. Sugar
- 3 x Large eggs
- 5 c. All-purpose flour
- 1 tsp Baking soda
- 1 1/2 c. Raisins
- 1 c. Walnuts coarsely minced
- 1/2 c. Red candied cherries minced
- 1/2 c. Green candied cherries minced
- 1/2 c. Candied pineapple minced
Directions
- In a mixing bowl, cream butter and sugar. Add in Large eggs, one at a time, beating well after each. Combine flour and baking soda; add in to creamed mix. Stir in raisins, nuts, cherries and pineapple; mix well. Shape into 2" rolls; wrap in waxed paper or possibly foil. Freeze at least 2 hrs. Cut into 1/4" slices; place on greased baking sheets. Bake at 350 degrees for 8-10 min or possibly till lightly browned. Cold on wire racks.
- Yield: 12-14dozen.
