Ingredients
- 6 ounce turkey breast tenderloin
- 1 1/2 tsp Caribbean jerk seasoning
- 4 c. broccoli slaw
- 1 lrg tomato seeded, minced (abt 1 1/3 c.)
- 1/3 c. reduced-fat cole slaw dressing
- 2 x jalapeno peppers finely minced
- 2 Tbsp. mustard (optional)
- 8 x fat-free flour tortillas - (8" dia) warmed
Directions
- Prepare grill for direct grilling. Rub jerk seasoning on both sides of turkey.
- Grill turkey over medium coals 15 to 20 min or possibly till turkey is no longer pink and juices run clear, turning once. Thinly slice turkey.
- Toss together broccoli slaw, tomato, dressing, jalapeno pepper and mustard. Place sliced turkey on tortillas; spoon broccoli slaw mix on top. Wrap to enclose. Serve immediately.
- This recipe yields 4 servings.
- Caution: Jalapeno peppers can sting and irritate the skin; wear rubber gloves when handling peppers and don't touch eyes. Wash hands after handling peppers.
