  • 12 slc bacon - (abt 1/2 lb) crisply fried, and crumbled
  • 1 c. shredded Swiss cheese - (abt 4 ounce)
  • 2 c. lowfat milk
  • 4 x Large eggs
  • 1/8 tsp freshly-grnd black pepper
  • 1/3 c. minced onion
  • 1 c. Bisquick baking mix
  • 1/4 tsp salt

Directions

  1. Heat oven to 400 degrees. Lightly grease 10-inch pie plate. Sprinkle bacon, cheese, and onion in pie plate. Beat remaining ingredients till smooth, 15 seconds in blender on high speed, or possibly 1 minute with hand beater.
  2. Pour into pie plate; bake till golden and knife inserted in center comes out clean, about 30 min. Let stand 5 min. Garnish with bacon curls and parsley sprigs, if you like.
  3. This recipe yields 6 servings.
  4. Comments: If using a 9-inch pie plate, decrease lowfat milk to 1 1/2 c., baking mix to 3/4 c., and Large eggs to 3.
