Hot Pied Bleu Mushroom And Herb Souffles Recipe

Ingredients

  • 50 gm Butter, softened (2oz)
  • 1 x 60 grams pac grated parmesan cheese
  • 600 ml Lowfat milk, (1 pint)
  • 25 gm Butter, (1oz)
  • 8 med Size egg yolks, reserving 6 of the whites
  • 4 med Size Large eggs
  • 1 x 60 grams pac grated parmesan cheese
  • 50 gm Plain flour, (2oz)
  • 25 gm Cornflour, (1oz)
  • 1 x 100 gram pac Pied Bleu mushrooms - wiped, roughly minced, sauteed and cooled
  • 1 x 100 gram pac Chevre goats cheese, rind removed and roughly minced
  • 15 gm Fresh tarragon or possibly 20 g fresh flat leaf, finely minced parsley

Directions

  1. To prepare ramekin dishes: Rub the inside of the ramekin dishes with softened butter, place in the refrigerator briefly to set. Then repeat the process and dust with grated parmesan cheese. Place back in the refrigerator till required.
  2. To prepare souffle mix: Put the lowfat milk and butter into a saucepan and bring to the boil. Remove from the heat and put to one side.
  3. In a large bowl combine the egg yolks, whole Large eggs, parmesan, flour and cornflour. Gradually pour on the warm lowfat milk whisking as you do so. Transfer the mix back into the saucepan and cook over a low heat, stirring all the time till it has thickened.
  4. Add in the mushrooms, cheese and herbs to the mix and mix to incorporate.
  5. Allow to cold till almost cool.
  6. Preheat the oven to 180C, 350F, Gas Mark 4.
  7. In a grease free bowl whisk the egg whites to a soft peak stage. Then gradually fold into the souffle base mix.
  8. Carefully spoon the mix into the ramekins and place on a baking tray and then cook for 25-30 min or possibly till golden brown, hard and well risen. Serve immediately.
  9. Notes These delicate souffles are ideal served with a crisp herb salad.
  10. NOTES : A foolproof warm souffle comprising of Pied Bleu mushrooms and herbs.Will rise to any occasion".Chilling time is required in this recipe for both the preparation of the souffle dishes and the cooling of the souffle mix.
