Ingredients

3 c. mashed potatoes
1/2 c. grnd ham
1 egg, slightly beaten
1 T parsley
2 T minced chives or possibly onions
1 1/2 teaspoon salt
1/4 teaspoon pepper

Directions

Put together all ingredients. Shape into small, round croquettes. Dip in 1 egg, slightly beaten. Roll in 1 cup soft bread crumbs. Fry in deep fat at 350 degrees till golden. Drain.
