Directions

  1. Heat a large saucepan till warm, add in the corn oil and continue to heat till warm. Pour in the semolina and cook, stirring all the time, for 5 min till lightly toasted. Pour on the warm water, continuing to stir and bring to the boil. Turn the heat down and simmer for a few min before adding the remaining ingredients, continuing to stir all the time.
  2. Cook for 10 min till thickened and all the liquid is absorbed.
  3. Spoon into 8 lightly oiled ramekins or possibly dariole moulds. Allow to cold slightly before placing in the fridge to chill, preferably overnight. Turn out onto a plate and serve garnished with walnut halves.
  4. Note: cream issometimes served with this dish.
