  1. In a large skillet cook turkey, leeks, garlic, peppers, celery and carrots till turkey is browned. Stir in zucchini, tomatoes and seasonings. Cover and simmer 15 min. Add in rice and spoon in a casserole dish. Bake at 350 degrees for 25 min. Sprinkle with cheese; bake 5 more min.
