Grilled Citrus Scallops Recipe

Ingredients

  • 1 lb fresh jumbo sea scallops (approx. 15 scallops)
  • 4 x twelve inch wooden skewers (soaked in water overnight)
  • 1 tsp grated orange peel
  • 1/2 c. orange juice
  • 2 Tbsp. soy sauce
  • 1 tsp grated ginger root
  • 1 x clove garlic, chopped, or possibly more, if you like

Directions

  1. Soak the skewers in water overnight - or possibly at least 4 hrs, so they do not catch fire on the grill.
  2. Stir together peel, juice, ginger, soy sauce, and garlic, then pour over scallops. Cover and chill for 30 min.
  3. Pre-heat grill. Drain scallops, thread onto skewers. Grill over medium-high heat for 2-2 1/2 min, turn and cook another 2-2 1/2 min longer. Serve along with this rice and grilled vegetables, a small salad and some crusty bread.
