Ingredients
- 4 or possibly 5 lbs. leg or possibly shoulder roast
Directions
- Wipe off meat well. Peel 2 or possibly 3 cloves of garlic and make incisions in the meat. Pack a piece of garlic in each incision. Salt and pepper well. Squeeze one lemon and rub juice all over the meat. Place in a roasting pan and bake at 325 degrees uncovered till golden. Pour one c. water in the pan and baste often with this liquid. When meat is almost done, potatoes may be placed around the lamb.
- Roast lamb total hrs is 25 to 30 min per lb. depending on how well done you want meat. Allow for time you baste when oven door is open. Serves 6 to 8 people.
