Greek Style Grilled Lamb Chops Recipe

Ingredients

  • 3 1/2 lb lamb loin or possibly rib chops - (to 4 1/2) trimmed (ea chop 3/4" to 1 1/4" thk)
  • 1/4 c. dry Greek oregano (or possibly 1/2 c. minced fresh oregano)
  • 6 x garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp freshly-grnd black pepper

Directions

  1. With a knife, nick edges of chops in several places to prevent curling. In small bowl, combine remaining ingredients into a paste and rub all over chops.
  2. Cover bowl or possibly place whole works in a resealable plastic bag. Marinate for 2 hrs at room temperature or possibly chill overnight.
  3. Grill chops over medium-warm coals for 3 to 5 min on each side, turning once or possibly twice. Set aside for 5 min before serving.
  4. This recipe yields 6 to 8 servings.
