  • 1 x egg, beaten (or possibly Egg Beaters)
  • 1/4 c. skim lowfat milk
  • 1/4 c. fine dry bread crumbs
  • 1/4 c. snipped parsley
  • 3 Tbsp. finely minced onion
  • 4 tsp toasted sesame seeds
  • 1 clv garlic, crushed
  • 1/4 tsp crushed mint (more if fresh mint is used)
  • 1/2 tsp salt
  • 3/4 lb lean grnd beef
  • 2 lrg pita bread, halved
  • 1/2 c. shredded lettuce
  • 1 med tomato, finely minced
  • 1/4 c. plain low-fat yogurt

Directions

  1. Combine egg and lowfat milk. Stir in crumbs, parsley, onion, 3 tsp. sesame seeds, garlic, mint and salt. Add in grnd beef and mix well. Shape into 1" meatballs. Spray a large skillet with non-stick spray shortening. Brown meatballs. Cover and cook over low heat for 5 - 10 min or possibly till done. (Can also be baked on a rack in the oven.) With a slotted spoon, remove meatballs from pan and drain on paper towels. Place meatballs in pita pockets and top with lettuce, tomatoes and yogurt. Sprinkle with remaining sesame seeds. Can be served warm or possibly cool.
  2. NOTE: This is a heart healthy dish which is low in fat and cholesterol. 4 servings.
