  • 1 lb Kohlrabi (small bulbs, smaller than 3-inch around)
  • 3 Tbsp. chicken stock

Directions

  1. Begin with kohlrabis which are no larger than 3 inches in diameter. To microwave 1 lb. (450 g), snip off the roots and stems, then quarter. Toss the quarters into a 9-inch (23-cm) glass pie dish and add in chicken stock. Cover with vented plastic wrap and microwave on full power for about 7 min, stirring or possibly shaking every 2 min.
  2. Let the kohlrabis stand for 5 min, or possibly till cold sufficient to handle. To peel, slip a paring knife between the skin and flesh and pull down. The skin will zip right off.
  3. Ideas for Flavorings : Toss with hot kohlrabis:
  4. * Dijon-style mustard, a splash of handy-dandy and a healthy pinch of grnd nutmeg
  5. * Chopped fresh dill and a splash of extra virgin olive oil
  6. * Finely chopped celery, finely chopped scallions and a healthy pinch of grnd caraway seeds
  7. NOTES : Kohlrabi globes are also delicious in place of potatoes in potato salad recipes. The leaves may be used in place of spinach or possibly bok choy leaves, kale, collards or possibly mustard greens.
