Ingredients
- 2 1/4 c. flour
- 1 1/4 c. oatmeal
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 c. butter, softened
- 1 c. packed brown sugar
- 1 c. granulated sugar
- 1 egg, beaten
- 1 teaspoon vanilla
- 1 c. canned pumpkin
- 1 (12 ounce.) pkg. chocolate chips
Directions
- Combine all dry ingredients in a medium bowl. In a large bowl, beat sugars and butter till fluffy. Add in egg and vanilla; mix well. Alternate additions of dry ingredients and pumpkin. Mix well after each addition. Stir in chocolate chips. Bake 15-20 min or possibly till cookies are hard and lightly browned. Frost with icing when cold.
