Directions

  1. Cook sweet potatoes, covered 20-25 min. When cold to the touch, peel and cut into 1/2 inch slices. Arrange slices in slightly greased 12 x 8 x 2 inch baking dish. Set aside.
  2. Combine brown sugar and next 7 ingredients in a saucepan. Cook over medium heat, stirring constantly till mix boils. Boil 1 minute, stirring constantly till mix is thickened and bubbly. Pour over sweet potatoes. Sprinkle with minced walnuts, if you like. Cover and chill 8 hrs. Remove and let stand 30 min. Uncover and bake 30 min at 350 degrees till heated.
