Ingredients
- 400 gm Potatoes, peeled and minced (13oz)
- 15 gm Half-fat spread, ( 1/2oz)
- 2 Tbsp. Semi-skimmed lowfat milk
- 500 gm Cooked white fish fillets, skinned and flaked, eg cod, coley or possibly haddock (1lb)
- 2 x Large eggs, hard-boiled and minced
- 1 Tbsp. Minced fresh parsley Salt and pepper
- 2 x Large eggs, beaten
- 150 gm Fresh wholemeal breadcrumbs, (5z) Tomato slices Fresh parsley, or possibly dill sprigs
Directions
- Cook the potatoes in boiling lightly salted water till soft. Drain.
- Mash the potatoes with the half-fat spread and lowfat milk. Season to taste. Add in the cooked fish, hard-boiled Large eggs and parsley and mix well. Check the seasoning.
- Divide the mix into 12 and form into simple fish shapes. Place on greased baking sheets and refrigeratefor at least 10 min.
- Dip each fish shape in the beaten egg and coat with the breadcrumbs.
- Grill the shapes under a preheated moderate grill for 5 min each side, or possibly till golden and heated through. Serve garnished with tomato slices and parsley or possibly dill.
