Ingredients
- 1Â 1/2 c. quick cooking oats
- 1/2 c. flaked coconut
- 1/3 c. minced peanuts
- 1/3 c. sugar
- 1/4 c. smooth peanut butter
- 1/4 c. vegetable oil
- 1 pkt (10 ounces) peanut butter chips
Directions
- In a large bowl combine oats, coconut, peanut butter, and oil over medium heat. Stirring constantly, cook till sugar dissolves. Remove from heat and add in chips and stir till melted. Combine peanut butter mix wit oat mix, stir just till moistened. Drop by spoonfuls onto lined cookie sheets. Refrigerateabout 30 min, store in airtight container and keep in fridge.
- Makes 3 1/2 dozencookies.
