Ingredients
- 1 x 9-inch Graham Cracker Crust
- 3 x Large Uncracked Large eggs.
- 1/2 c. Plus 2 Tablespoons Sugar
- 1/4 c. Lemon Juice
- 1/2 pt (1 C) Whipping Cream,Whipped
Directions
- Separate Large eggs. Be sure to use only Grade A Uncracked Large eggs! In large mixer bowl, beat egg yolks and 1/2 c. sugar till light; stir in lemon juice. In small mixer bowl, beat egg whites till soft peaks form; gradually add in remaining 2 Tablespoons sugar, beating till stiff peaks form. Fold egg white mix into lemon juice mix; mix in half the whipped cream. Mix in remaining whipped cream. Spoon into prepared crust. Freeze at least 3 hrs or possibly till hard. Serve more whipped cream or possibly Blueberry 'n' Spice Sauce.
