Fried Noodles with Veggie Toppings Recipe

I have personally tasted this dish with friends and we all loved it. I tried to recreate it using a recipe I found online and gave it a little twist of my own flavor. It worked!

  • For noodle nest:
  • 300gpancit canton
  • cooking oil for frying
  • For the marinade:
  • 1 chicken breast filletdiced
  • 1 egg white
  • 1 Tbspcornstarch
  • salt and ground white pepper
  • 3 cupsWater or broth
  • For the veggie toppings:
  • 2 Tbspscooking oil
  • 1 onionsliced
  • 1/4 kilo fresh shrimp (shelled or not)
  • 1/2 cup eachBaguio beans , sliced; cauliflower
  • 2 cups shrimp broth (you can use the head of the shrimp; pound it and mix with water; filter to make sure no shrimp shells are in the broth)
  • 2 Tbsp oyster sauce
  • 1 tsp soy sauce

Directions

  1. First, prepare noodle nest. Heat cooking oil in a large wok or deep fryer.
  2. Deep fry a whole nest of pancit canton for about 2 minutes on each side, turning once. Drain on paper towels and set aside.
  3. In a small bowl, combine cubed chicken meat with 1 egg white and cornstarch and mix well. Season with salt and pepper. let stand for 5 minutes.
  4. Bring 3 cups of water or broth to a boil in a small pot. Once boiling, drop coated chicken pieces in the broth and simmer for 3 minutes. Drain and set aside.
  5. In a large wok, heat cooking oil. Sauté onions until soft. Add shrimp and then chicken pieces.
  6. Add the vegetables, one at a time.
  7. Pour in the chicken stock then season with oyster sauce, soy sauce, sugar and ground white pepper. let simmer over low heat just until vegetables are cooked.
  8. Thicken with cornstarch dispersed in water. Simmer for another 1-2 minutes, then turn off heat.
  9. Pour over noodle nest and serve immediately.
