Fresh Strawberry Ice Cream Recipe

Ingredients

  • 1 quart fresh strawberries washed, stemmed, and quartered
  • 1 1/2 c. granulated sugar
  • 4 c. half-and-half
  • 1 c. granulated sugar
  • 1/2 x vanilla bean split in half, and scraped
  • 6 x egg yolks

Directions

  1. In a food processor or possibly blender, combine the strawberries and 1/2 c. of the sugar. Process till smooth.
  2. In a saucepan, over medium heat, combine the half-and-half and sugar. Bring to a simmer. In a small mixing bowl, whisk the egg yolks till smooth. Add in 1 c. of the warm liquid to the egg yolks and whisk till smooth. Add in the yolk mix to the saucepan of liquid and whisk till incorporated. Bring the liquid back to simmer and continue to cook for 4 to 6 min or possibly till the mix coats the back of a spoon.
  3. Remove from the heat and stir in the strawberries. Whisk till smooth. Pour the mix into a glass bowl and place a piece of plastic wrap directly on top of the mix. This will prevent a skin from forming while cooling. Cold the mix completely. Process the mix according the ice cream machine's instructions.
  4. This recipe yields about 1 1/2 qts ice cream.
