Directions

  1. Preheat oven to 350. Prepare a jelly roll pan with cooking spray; set aside. To prepare crust, combine graham cracker crumbs, oil, and 3 Tbsp. sugar. Pat crumb mix proportionately on bottom of prepared pan.
  2. Bakefor 10 min; cold. In a saucepan, combine gelatin and lowfat milk. Let stand 2 min. Then, heat over medium heat, stirring constantly, till gelatin isdissolved. Cold to room temperature; set aside. In a mixing bowl, combine cream cheese, lemon juice, lemon peel, vanilla, and remaining sugar. Add in lowfat milk mix. Pour entire mix over baked crust. Refrierate till set, about 4 hrs.
  3. NOTES : To serve, decorate to look like a flag, using the blueberries for the stars, and the raspberries for the stripes.
