Directions

  1. Combine apple and sugar in a bowl; let stand 10 min.
  2. Combine flour and next 4 ingredients in a large bowl; stir well. Make a well in center of mix. Combine oil, vanilla, and egg white; stir well.
  3. Add in to dry ingredients, stirring just till moistened. Stir in apple mix. Spoon batter into an 8-inch square baking pan coated with cooking spray.
  4. Bake at 350 degrees for 40 min or possibly till a wooden pick inserted in center comes out clean. Cold completely in pan on a wire rack.
  5. Yield: 9servings (serving size: 1 [2-1/2 x 2-1/2-inch] piece).
