Foil Poached Salmon Recipe

  • 3 lb Whole or possibly half salmon
  • 1 c. Water
  • 1/4 c. Lemon juice
  • 1/2 c. Minced onion
  • 1/2 tsp Basil
  • 1/4 tsp Rosemary
  • 1/4 tsp Tarragon
  • 2 x Lemon slices
  • 1/2 tsp Salt, optional Lemon or possibly cucumber slices for garnish Parsley sprigs or possibly fresh dill for garnish Heavy-duty aluminum foil

Directions

  1. California Kosher Cookbook, Serves 6 to 8 (Pareve)
  2. 1. In a medium saucepan, combine all ingredients except salmon and simmer gently for 20 min.
  3. 2. Wash salmon.
  4. 3. Place heavy-duty aluminum foil on a sturdy cookie sheet or possibly in a large pan (use sufficient foil to wrap fish and poaching liquid). Bring up edges of foil; pour poaching liquid over salmon. Crimp the foil to seal tightly.
  5. 4. Bake at 375 degrees for 9 - 10 min per lb. of salmon, for a minimum of 30 min. Remove from oven; allow to stand 5 min before opening foil.
  6. 5. Remove skin, transfer to serving plates or possibly platter and decorate with lemon or possibly cucumber slices, parsley or possibly dill, as desired.
  7. 6. May be served warm or possibly chilled
