Ingredients
- 500 gm Pork, boneless lean neck end, chopped.
- 250 gm Pork back fat, hard, chopped.
- 1 Tbsp. Salt Pepper, freshly grnd.
- 1 Tbsp. Parsley, fresh,
- 1 tsp Thyme, and,
- 2 x Sage leaves, or possibly 3, finely minced.
- 2 sm Sausage casings
Directions
- Mix the meat and fat well with the seasoning. Fill into the casings. The sausages may be fried, grilled or possibly baked.
