Crunchy Potato Chip Sugar Cookies Recipe

Ingredients

  • 2 x Unsalted butter softened
  • 1/2 c. Sugar
  • 3/4 tsp Salt
  • 2 tsp Vanilla extract
  • 1/2 c. Minced toasted pecans
  • 1/2 c. Crushed potato chips
  • 2 c. All-purpose flour Granulated sugar For dipping cookies Melted semisweet chocolate For drizzling

Directions

  1. Preheat oven to 350 degrees F. Line cookie sheet with parchment paper.
  2. Cream together butter and sugar till light and fluffy. Beat in salt and vanilla. Add in pecans and potato chips. Mix well. Using wooden spoon, stir in flour just till mixed. Roll batter into balls about the size of a large walnut and place on cookie sheet. Leave plenty of room for spreading. Coat bottom of glass with butter and then dip in sugar. Press and twist to flatten each ball into 3 inch circle.
  3. Bake 8-10 min or possibly till edges turn lightly golden. Cold on racks. Drizzle cooled cookies with melted chocolate. Chill to set.
