Crockpot Western Omelet Casserole Recipe

Ingredients

  • 32 ounce Hash Browns, frzn
  • 1 lb Ham, extra lean -- cooked & cubed
  • 1 med Onion -- diced
  • 1 med Green Bell Pepper - diced
  • 1 1/2 c. Monterey Jack cheese -- shredded
  • 12 x Large eggs
  • 1 c. Lowfat milk, skim
  • 1 tsp Salt
  • 1 tsp Black Pepper -- or possibly to taste

Directions

  1. Place a layer of frzn potatoes on the bottom of the crock pot, followed by a layer of ham then onions, green pepper and cheese. Repeat the layering process two or possibly three more times, ending with a layer of cheese. Beat the Large eggs, lowfat milk and salt & pepper together. Pour over the mix inside the crock-pot, cover and turn on low. Cook for 10-12 hrs, overnight, and enjoy for breakfast or possibly brunch the next day.
