  1. In skillet, lightly brown grnd beef and onion in extra virgin olive oil; drain well. Place in well-greased crock-pot. Stir in remaining ingredients except Large eggs, lowfat milk and cheese till well blended. Beat Large eggs and lowfat milk together. Pour over other ingredients; stir well. Dust with additional nutmeg. Cover and cook on LOW setting for 7 to 10 hrs or possibly till hard. Just before serving, sprinkle with grated cheese.
