Country Style Apple Cranberry Pie Recipe

Ingredients

  • 1/4 c. plus 1 Tbsp. sugar
  • 3 Tbsp. all-purpose flour
  • 3 Tbsp. chilled butter, cut into small pcs
  • 1/2 tsp cinnamon
  • 4 x Jonagold apples, peeled, cored, quartered, then each quarter cut crosswise into 4 pcs
  • 1/3 c. fresh or possibly thawed frzn cranberries (or possibly 1/2 c. dry cranberries soaked in boiling water for 5 min and liquid removed)
  • 1 1/4 c. all-purpose flour
  • 1/4 tsp salt
  • 5 Tbsp. chilled butter or possibly margarine
  • 3 x to 4 Tbsp. cool water

Directions

  1. Combine sugar, flour, butter and cinnamon with fingertips or possibly 2 knives till crumbly; set aside.
  2. Preheat oven to 450 degrees.
  3. To make pastry for a 10 inch country-style pie: Combine flour and salt in a bowl. Cut in butter till crumbly. Gradually add in water, tossing to mix. Gather into disk, wrap in waxed paper; refrigerate1 hour.
  4. Roll out pie pastry on lightly floured surface to a 15 inch circle. Fold it gently into quarters and transfer to a large baking sheet.
  5. Unfold and arrange apples in center 10 inches of dough; sprinkle with cranberries. Sprinkle with sugar mix.
  6. Bring outer edge of dough 2 1/2 inches over apples, pleating as needed. Gently press the outside edge of dough to the pan.
  7. Bake 30 min or possibly till apples are tender. If necessary, cover with foil to prevent crust from becoming too brown. Cold on rack 10 min; serve hot.
