Ingredients
- 4 x Cornish game hens (20 ounces each)
- 2 Tbsp. vegetable oil
- 4 lrg red potatoes, cut into 1/8-inch slices
- 4 x bacon strips, cut into1-inch pcs Lemon-pepper seasoning and garlic pwdr to taste Chopped fresh parsley
Directions
- In a large skillet, brown hens in oil. Place the potatoes in a 5-quart. slow cooker. Top with the hens and bacon. Sprinkle with lemon-pepper and garlic pwdr. Cover and cook on low for 6-8 hrs or possibly till meat juices run clear and potatoes are tender. Thicken the cooking juices if you like. Sprinkle the hens with parsley.
- Yield: 4 servings.
- Note: The times I have cooked this dish I did not use the potatoes. Always comes out flavorful and juicy.
