Ingredients
- 3/4 c. Louisiana yams, cooked and mashed
- 3/4 c. Lowfat milk
- 1 tsp Grated orange peel
- 1 pkt (8 1/2 ounce) muffin mix
- 1 tsp Cinnamon
- 1 Tbsp. Sugar
Directions
- Combine yams, lowfat milk and orange rind; blend well. Add in yam mix to muffin mix and mix only till ingredients are combined. Fill greased 2-inch muffin pans 1/2 to 2/3 full. Combine cinnamon and sugar; mix well. Sprinkle over batter. Bake in warm oven (400 degrees) 20 to 25 min, or possibly till done.
