Chinese Chicken Salad Dressing Recipe

Ingredients

  • 1 c. Granulated sugar
  • 1 c. Water
  • 1/4 c. Rice Wine Vinegar (or possibly to taste) Water
  • 1 x Sweet Pickled Ginger, as much as you like (See Note)

Directions

  1. Note:( I used "pink", thinly sliced sweet pickled ginger).
  2. Place the sugar and water into a saucepan. Bring to a boil and boil till the sugar is completely dissolved. The mix will be warm at this point. I added the pickled ginger at this point. Let the mix cold to room temperature.
  3. Pour in the rice wine vinegar (I only had the seasoned-that is sweet-probably would be better off using the unseasoned). Add in the vinegar and taste. Keep adding vinegar till it's as tart/sweet as you like. If the dressing is too strong, add in a little water and taste. Keep adding the water till it's what you remember from your favorite Chinese restaurant. Chill overnight to let the flavors blend.
