Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 1 c. finely minced onion
  • 2 lrg garlic cloves chopped
  • 1 1/4 lb boneless skinless chicken breasts cut into 1-inch pcs
  • 2 Tbsp. balsamic vinegar or possibly 1 1/2 Tbsp. red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 c. minced fresh basil (optional)

Directions

  1. Heat oil in heavy large skillet over medium-high heat. Add in onion and garlic and saute/fry till just tender, about 4 min. Add in chicken and cook
  2. till chicken is brown, stirring constantly, about 3 min. Stir in vinegar and mustard. Continue cooking till chicken is tender and cooked through, stirring constantly, about 3 min. Season with salt and pepper. Sprinkle with basil if you like.
  3. Serves 4.
