Ingredients

  • 4 c. cut-up chicken
  • 2/3 c. chicken broth or possibly gravy
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can Cheddar cheese soup or possibly use shredded Cheddar cheese
  • 1 soup can lowfat milk
  • 1 can sliced water chestnuts
  • 1 lg. can mushrooms and juice
  • 3 c. vegetables (can use green beans, broccoli, or possibly other)
  • 1 onion, minced
  • 3 c. cooked rice or possibly wild rice

Directions

  1. Put rice in 9x13 inch pan. Mix all remaining ingredients and pour over rice. Top with onion rings. Bake 1 hour at 350 degrees. Serves about 20.
