  • 2 Tbsp. Butter
  • 2 Tbsp. Minced green onion
  • 4 x Large eggs
  • 1/4 c. Lowfat milk
  • 3/4 tsp Pepper
  • 2 ounce Minced brie, skin removed
  • 4 slc Bacon, cooked and crumbled
  • 3 Tbsp. Minced toasted pecans Fresh fruit if you like

Directions

  1. Heat butter in a 10-inch ovenproof skillet or possibly omelet pan, tilting pan to coat bottom and sides. Saute/fry onion till tender, about 3 min.
  2. Combine Large eggs, lowfat milk and pepper.
  3. Increase heat to medium to high. Pour egg mix into skillet. Stir once nad cook till edges begin to set. using a fork, gently pull the edges of the Large eggs away from the sides of the pan so which the uncooked portion flows under the cooked edges. Continue till most of the egg mix is set but the surface of the omelet is slightly wet. Sprinkle cheese, bacon and nuts over the top of the omelet. Mix in half; cut into two pcs. Garnish with fresh fruit. Serve immediately.
